Strawberry Avocado Breakfast “Ice Cream” (Vegan, Gluten-Free)

Hello all you wonderful health foodies! I’m so pleased to be here again, thank you having me North Coast Naturals! Today I’m sharing a breakfast recipe that feels like dessert. Thicker than a smoothie, this is just like eating a bowl of ice cream for breakfast, strawberry ice cream to be more specific!

With warm weather finally being here and strawberry season almost upon us, I can hardly think of a more perfect treat! But wait – it’s not only delicious, but healthy too – I swear! When strawberries are in season not only does their flavour launch this recipe right out of the park, they are also higher in in vitamin C, manganese and antioxidants!

Avocado Strawberry Ice Cream - Vegan, Gluten-Free

Don’t be afraid of the avocado here – it blends right in – you can’t even tell it’s there except for the rich creaminess it gives, thanks to all it’s healthy fats. I used North Coast Naturals Organic Hemp Protein Powder and Ultimate Daily Cleanse to not only add some stellar nutrition in the form of protein, healthy fats and fibre, but also to help thicken it.

Stevia sweetens it up more without causing a blood sugar spike and a small dash of raw honey makes this taste even more decadent, while giving it some super awesome anti-microbial properties. Finally, the cinnamon helps to balance blood sugar. Who knew you could pack so much healthiness into something so tasty?

Avocado Strawberry Ice Cream - Vegan, Gluten-Free

This is creamy, sweet and rich tasting just like that much-loved dessert but is actually vegan, gluten-free, paleo, rich in protein, healthy fats and fiber and low glycemic! Can you really get better when it comes to breakfast?

All you need is a blender to whip this up and it’s ready in 5 minutes flat. This means you have more time to laze around in bed, musing about how something so rich and decadent could possibly be healthy for you. Enjoy!

Ingredients
  • ¼ of a ripe avocado
  • 1 cup frozen strawberries
  • 1 tbsp NCN Ultimate Daily Cleanse
  • 1 tbsp NCN Organic Hemp Protein Powder
  • 1 tbsp chia seeds (or more Ultimate Daily Cleanse)
  • water for blending (start with ½ cup and increase from there depending on strength of your blender)
  • 1 tsp raw honey
  • stevia to taste, or another sweetener of choice
  • pinch of cinnamon
  • pinch of sea salt
Instructions
  1. Place all ingredients in your blender, starting with ½ cup water and blend until smooth, adding water as needed.
  2. Spoon into a serving bowl and sprinkle with toppings of choice, such as NCN Hemp Seeds.
